One of my favorite snacks of all time is chips and dip! I especially love chips and salsa. Fresh salsa is way better than the one’s that come in the jar. What I love to do is make my own salsa at home. It tastes so good, it’s fresh and you can control what goes inside. Yesterday was one of those days I felt like whipping up some fresh salsa out of the ingredients I had in my fridge. I didn’t have any cilantro at the time but, if you do, put a handful of fresh chopped cilantro and it will be soooo good! This recipe is easy because you just have to throw it in a food processor and pulse it a few times and you’re done!
Here’s my recipe if you want to try it out for yourself.
Makes about 2 cups
½ Red Bell Pepper
1 large Jalapeno
1 Small Lime
1 tsp garlic
¼ tsp Cumin
Salt & Pepper to taste
Handful of fresh chopped cilantro (optional)
Cut the tomatoes, red bell pepper, onion and jalapeno into small chunks. It doesn’t have to be too small, just small enough to fit into the food processor. Also try to make them all about equal size so that the ingredients will blend evenly. Add more or less jalapeno depending on how spicy you like it. After throwing the pieces into the food processor, drop in the garlic and squeeze all of the juice from the lime. If you want, throw in a handful of cilantro. Pulse the ingredients just until they are just blended. Be sure not to pulse it too much. I quickly pressed the pulse button about 5-6 times. Afterwards, add salt and pepper to your liking. Transfer into a container and let chill in the refrigerator for about 1 hour. Serve with tortilla chips! My favorites are the Mission Tortilla Rounds.
If you have leftover salsa (if that’s even possible!), I like to spoon some on top of scrambled eggs in the morning. So good!
