Breaded Parmesan Chicken Breast : Easy Weeknight Dinner

These Breaded Parmesan Chicken Breasts make for an easy weeknight dinner!

The hardest part of making dinner (for me at least) is figuring out what the heck to make! I try to make something different everyday to keep the spark going in life 🙂 Recently, I've tried this parmesan breaded chicken and it was a hit between my husband and me so it is now my go-to-easy-meal whenever I’m not really sure what to make. One thing we always have in our kitchen is chicken breast. I know, fresh is always better, but it’s so easy to stop at Sam’s Club and buy a 10 pound bag of frozen chicken breast because I know it will last us a lot longer and save us more money.

Last night, I made my Parmesan Breaded Chicken Breast and baked it along with some asparagus and potatoes. It turned out really good! I’ll leave the recipe below if you all want to try it out for yourself. You can bake the potatoes right along with the chicken and add the asparagus on the same sheet in the last 15 minutes of the baking process. Really easy and super convenient because you can bake everything all in one pan!

 


Ingredients:

For the Chicken:
2 Chicken Breast
1/2 Cup Progresso Bread Crumbs Italian Style
1/3 Olive Oil
1 tsp Minced Garlic
1/4 Cup Shredded Parmesan Cheese

For the Potatoes:
4 Small Red Potatoes
1 Tbsp Olive Oil
1 Tsp Garlic Powder
1 Tsp Oregano
Salt & Pepper to taste

Handful of fresh asparagus

Directions:
Preheat oven to 400 degrees F and prepare a lined and greased baking sheet. Cut chicken breast lengthwise and horizontally to form thinner pieces like chicken tenders (optional). Set aside. In a bowl, mix together the olive oil and minced garlic. Set aside. In a shallow dish, mix together the bread crumbs and the parmesan cheese. Take your chicken breast and dredge them in the olive oil mixture. Shake off excess oil and dip the chicken into the bread crumb mixture. Press the crumbs into the sides of the chicken to assure all sides are evenly coated. Transfer chicken breast to the baking pan.
Next, clean your potatoes and cut into quarters. Mix together in a bowl with the olive oil, garlic powder, oregano, salt & pepper. Lay your potatoes in the same baking sheet next to the chicken. Place in oven and bake for approx. 35 minutes or until the chicken reaches 165 degrees F. Be sure to flip the potatoes once, halfway through the cooking process. While the chicken is baking, wash and cut the asparagus in half. Add the asparagus in the same baking sheet in the last 15 minutes of the cooking process. Enjoy!
