In an “attempt” to try and eat healthier, I’ve been trying to make a meatless dinner at least one day out of the week. So, of course, Pinterest is where I go to hunt for those unique recipes to try! I always joke around that my husband is my Guinea pig because he’s the one who has to try all my weird food. Thankfully though, he likes most of what I cook for him (or so he says)! So, Mondays are the days that I try to do this meatless meal thing. We’re going along with the #MeatlessMonday trend! This is embarrassing but I actually thought that I had made that up but turns out I’m not that creative!
Anyway, on the hunt to find some yummy meatless recipes, I came across multiple pins on Pinterest for Cauliflower Buffalo ‘Wings’. Naturally, I was drawn because how can you take a recipe in which the main ingredient is chicken and NOT put chicken in it?! But, I tried it and it actually turned out really good! Of course, it’s not exactly the same as regular ‘ol Buffalo chicken wings but it’s a good alternative if you can’t eat meat or you’re just trying to limit it for whatever reason.
All you need is some cauliflower, flour, water, garlic powder and your favorite Buffalo Wing Sauce. I used Franks Red Hot Sauce because it seemed tone the most popular. Turns out it was really good!
Just mix together equal parts of flour and water. I actually mixed in some pepper and chili powder with the garlic powder, just for the extra flavor. Then, cut up your cauliflower into bite sized pieces. Toss evenly into your batter mixture, lay on a baking sheet and bake for about 15 minutes.
Then, take it out of the oven and toss with your Buffalo sauce! Put it back onto the baking sheet and bake for 20 more minutes.
And there you go! You can also broil them for a couple more minutes if you want them crispier. Just keep an eye on them. I also made some ranch dipping sauce with Greek yogurt. I just mixed some Ranch seasoning mix with my Greek yogurt. ‘Twas good!
